The strawberry season is considered one of the most anticipated at the beginning of summer. However, even the best variety will not fully reveal its flavor if the berries are picked too early. Experts emphasize that for maximum sweetness, strawberries must fully ripen on the plant.

The ripening period for strawberries depends on the climate and growing conditions. After flowering, the berries initially remain light green and then turn red. Gardeners advise harvesting only when the fruits have fully and uniformly reddened.
Experts note that strawberries achieve maximum sweetness, rich flavor, and good texture precisely after full ripening. However, it’s also not advisable to delay harvesting: while darker berries are often sweeter, they soften more quickly, and overripe fruits can start to spoil or develop mold.
Experts stress that strawberries do not ripen further after being picked. Therefore, berries harvested prematurely will not become sweeter during storage. This is precisely why it is recommended to wait until the fruits are fully colored directly in the garden bed.
The fruiting time also depends on the variety. For example, June-bearing varieties typically yield their main harvest in late spring or early summer over two to three weeks. Everbearing varieties fruit in two waves—spring and autumn, although they usually produce fewer berries. In contrast, day-neutral varieties can produce crops throughout the season.
It is best to pick strawberries by hand. To do this, gently pinch or snap the stem a few centimeters away from the berry. It is not recommended to pull or squeeze the fruits, as the delicate flesh is easily damaged.
When harvesting, berries should be placed into containers as carefully as possible. Strawberries bruise easily, so rough handling can shorten their storage life and impair their appearance.
